Or, for an even lighter bite, try our apple and hazelnut salad, showcasing the cave-aged flavours of Rock Star, paired beautifully with a dressing ingeniously created from our Rhubarb & Gin Chutney, extra virgin olive oil, white-wine vinegar and black pepper.
For a simple supper, the whole family will love our golden cod and haddock fishcakes, which are given a mellow smokiness by our Beechwood mature Cheddar. Tasty and fun to make, they come into their own served with fresh salad leaves or steamed green vegetables with a squeeze of lemon. Alternatively, to give a fast-food favourite a lighter, spicier twist, there’s our Red Devil and tuna melt pizza. Cleverly using a tortilla wrap as a thin and crispy base instead of the usual dough, it’s topped with sweet chilli sauce, tuna, sweetcorn, spring onions and grated Red Devil, our fiery Red Leicester with Habanero chillies and peppers.
