The art of maturing vintage cheese is a highly skilled process which allows the cheese to develop a deeper, more complex flavour which is highly prized among food lovers. Wrapped in a distinctive red wax, Red Storm, our vintage Red Leicester, is typically matured for 18 months and has won multiple awards for its wonderfully nutty, caramel flavour and desirable crystalline texture. Meanwhile, Rock Star, our vintage Cheddar, is created using our own special recipe before being aged for 18 months, completing its maturation in sealed chambers deep inside Welsh slate caverns. The time spent underground within these caves ensures the optimum development of Rock Star’s distinctively rich flavours and smooth, dense texture with naturally occuring crystals – the hallmark of a high-quality vintage cheese.
