This highly skilled process allows it to develop a deeper, more complex flavour – highly prized among food lovers.Wrapped in a deep red wax, Red Storm, our vintage Red Leicester, is typically matured for 18 months and has won multiple awards for its wonderfully nutty, caramel flavour and smooth creaminess with the occasional crystal crunch.Meanwhile, Rock Star, our vintage Cheddar, is created using our own special recipe before being aged for 18 months, completing its maturation deep inside Welsh slate caverns surrounded by the mountains of Snowdonia. The time spent underground ensures the optimum development of Rock Star’s distinctively rich flavours and smooth, dense texture with naturally occuring crystals – the hallmark of a high-quality vintage cheese.
