Here at Snowdonia Cheese Co, we’ve been creating exceptional cheese since 2001.
We had a vision: to craft delicious, small-batch cheeses with as much character as the wild and beautiful Snowdonia landscape.
How it started
The philosophy of brothers John and Richard – fourth-generation dairy farmers in North Wales – is to use only the highest quality, carefully sourced ingredients. Each truckle is handcrafted to a unique recipe and bursting with flavour. Creamy, intensely savoury and wrapped in a wax as dark as Snowdonia’s night skies, Black Bomber extra mature Cheddar was an instant hit at local farmers’ markets. Red Storm, our irresistibly bold and complex vintage Red Leicester, followed later.
Rich Heritage
As word spread and Snowdonia Cheese Co grew, we wanted to continue to honour the rich heritage of North Wales – the harmony of its ancient land, its communities, its traditions. So we forged a close-knit family of food lovers. Craftspeople. Cheese experts. Cheese obsessives, you might say. Because who better to create exceptional cheese?
Cheese and beyond
We’re still dedicated to our pursuit of incredible flavour. We now produce 11 varieties of Cheddar and Red Leicester, sealed in richly coloured wax. Crunchy crackers baked the traditional way. Little jars of chutney for dolloping and dipping. Velvety cheese bakes for heating at home. Each created using time-honed techniques and our bespoke recipes.
Matured deep within slate caverns
And, of course, there’s Rock Star. Our famous vintage cave-aged Cheddar is matured deep within the remarkable slate caverns of Llechwedd at Blaenau Ffestiniog – once the slate capital of the world and now a UNESCO World Heritage site – surrounded by the mountains of Snowdonia. It’s our way of paying homage to the storied landscape of North Wales and the generations of slate miners that came before us.
