METHOD

  1. Spread 2 slices of bread lightly with butter on one side
  2. Spread 1 heaped teaspoon of pesto on unbuttered slice and arrange tomatoes, artichokes and sliced black olives on top
  3. Place cheese on top leaving slight gap at sides to allow for cheese melting. Top with second slice and press down gently
  4. Place in preheated sandwich toaster until golden brown or bake it in hot oven until crispy and golden
