1. To create the dressing, combine the extra virgin olive oil, white wine vinegar, Rhubarb & Gin Chutney and black pepper. Place in a screw top jar and shake vigorously.
2. Place salad leaves and apple slices in a large bowl, drizzle with Rhubarb & Gin salad dressing and toss gently to ensure evenly coated. Arrange on a serving platter.
3. Crumble over Rock Star and scatter chopped hazelnuts over salad.
