Ingredients: 2 little gem lettuce; 2 red apples, thinly sliced; 120g Snowdonia Rock Star cheese , thinly sliced; 2 tbsp chopped roasted hazelnuts; 3 tbsp extra virgin olive oil; 1 tbsp white wine vinegar; 1 tbsp Snowdonia Rhubarb & Gin Chutney; Black pepper

Ingredients:

2 little gem lettuce
2 red apples, thinly sliced
120g Snowdonia Rock Star cheese, thinly sliced
2 tbsp chopped roasted hazelnuts
3 tbsp extra virgin olive oil
1 tbsp white wine vinegar
1 tbsp Snowdonia Rhubarb & Gin Chutney
Black pepper

METHOD

To create the dressing, combine the extra virgin olive oil, white wine vinegar, Rhubarb & Gin Chutney and black pepper. Place in a screw top jar and shake vigorously.
Place salad leaves and apple slices in a large bowl, drizzle with Rhubarb & Gin salad dressing and toss gently to ensure evenly coated. Arrange on a serving platter.
Crumble over Rock Star and scatter chopped hazelnuts over salad.
