Hot Welsh rarebit bake

Ingredients:

  • 150g Black Bomber, cut into cubes
  • 4g cornflour
  • 50g cream cheese
  • 15g dark strong ale
  • 15g wholegrain mustard
  • 1 tsp lemon juice
  • 3/4 tsp Worcestershire sauce

1. Place cheese in a food processor and blend to a fine crumb then sprinkle over cornflour. Mix until evenly coated.

2. Add all remaining ingredients and mix to a smooth paste.

3. Place in a small shallow ovenproof baking dish and press down to get a smooth surface.

4. Bake at 180 degrees for approximately 15-20 mins until golden and bubbling.

5. Use a sheet of kitchen towel to remove any excess oil, allow to cool slightly and then serve immediately with tear & share bread.
