Broad Bean & Cheese Fritata

Serves 2 | Ready in 15 minutes

200g shelled broad beans
75g Green Thunder grated
3 eggs
2 tablespoons spring onions trimmed and finely chopped
handful of washed and chopped baby spinach leaves
50g butter
ground black pepper and sea salt
pinch grated nutmeg

• Cook broad beans until just tender, drain and rinse under cold water. Pop beans out of skins and set aside
• Beat egg, add 50g cheese, spring onions, seasoning and nutmeg and mix together well
• Preheat grill
• Melt butter in small heavy bottomed omelette pan
• Pour in egg mixture, scatter in the beans and spinach leaves. Cook over medium heat until the egg mixture is cooked underneath and beginning to set (approx. 3 mins)
• Sprinkle remaining cheese over the top and place under hot grill until cooked through and golden
• Serve warm with a salad or can be served cold as picnic dish.
