Light and delicious pesto dishes to savour this summer
Summer is here at last – so it’s time to savour the vibrant flavours of the season’s finest produce. Black Bomber, our award-winning extra mature Cheddar, lends its intense, deeply savoury notes to these easy-to-make dishes, featuring our delicious homemade basil pesto recipe and a bounty of fresh veggies.
Filled with asparagus, roasted peppers and baby courgettes, these delicate little puff-pastry vegetable tartlets are elevated a dollop of Black Bomber pesto, made with basil leaves and toasted pine nuts. They’re topped with slivers of melted Black Bomber extra mature Cheddar and served with a spoonful of sweet Balsamic Caramelised Onion Chutney.
Or for a quick family supper, this devilishly moreish pasta dish stars a swoosh of this classic green sauce, plus sautéed tomatoes, rocket leaves and crumbled Black Bomber. We love to make this with linguine, but it works beautifully with any pasta shape.
Bright and herbaceous, our Black Bomber pesto can be made in batches ahead of time and stored in a jar in the fridge. This versatile sauce is a great way to add zhuzh to dishes: swirl it into soup, drizzle on scrambled eggs or even use it as a rub for fish or beef.
