If you’re looking for a fun and festive way to present your cheese truckles this Christmas, you’ll love this beautiful Snowdonia “snowflake”, created with Black Bomber extra mature Cheddar and some strategic slicing. Here’s a step-by-step guide to how to make yours – and you can also see our how-to video here .

You will need:

  • 1 Black Bomber truckle
  • Sharp knife
  • Chopping board

Method:

  1. Carefully remove the wax from the Black Bomber truckle (see our video here for our favourite way).
  2. Place the cheese on a chopping board. Using a sharp knife, cut the truckle in half. Next, cut each half into two equal pieces to create four quarters.
  3. Cut each quarter into two equal pieces again, creating eight wedge-shaped sections.
  4. This is where the magic happens. Take one of the eight wedges and, carefully angling your sharp knife slightly inwards, cut two small sections of cheese off the end of each wedge to form a point, so the wedge becomes a diamond shape. This point will form the tip of the snowflake’s arms.
  5. Repeat this for each of the eight sections, making sure each one is roughly the same size, with similar angles.
  6. After cutting the diamonds, you will have some surplus cheese from the edges of the wedges. Don’t throw this away – you can use the leftover cheese in other recipes.
  7. Arrange all the diamond shapes into a snowflake pattern, pushing them together lightly to secure their positions. You now have a beautiful Snowdonia snowflake for your Christmas cheeseboard.
