Chilli Cheese Puffs
These spicy little choux buns can be served hot or cold and are
perfect for finger buffets, party food or pre meal canapés.
Ingredients

250ml Milk

100gm Butter
-
Pinch of salt

250gm Sifted strong flour

100gm Finely grated red devil cheese.

8 Medium eggs (approx 250gm weight broken and mixed)
Instructions

Place the milk, eggs and salt in a heavy bottomed pan bring to the boil.

Remove from heat add the flour and mix using a wooden spoon or spatula.

Return to moderate heat and stir till mixture leaves sides of pan clean.

Remove from heat .beat with spatula to remove some heat

Add the egg mixture by degrees till absorbed into the paste.

Whilst still warm stir in the grated cheese

Allow to cool.

Using a piping bag without a tube pipe out on to a non stick tray or sil-mat sheet into marble size balls.

Bake for approx 10mins till golden brown .

Serve hot or allow to cool.

Store in a sealed container....
