Chilli Cheese Puffs


These spicy little choux buns can be served hot or cold and are perfect for finger buffets, party food or pre meal canapés.


Ingredients

  • 250ml Milk
  • 100gm Butter
  • Pinch of salt
  • 250gm Sifted strong flour
  • 100gm Finely grated red devil cheese.
  • 8 Medium eggs (approx 250gm weight broken and mixed)

Instructions

  • Place the milk, eggs and salt in a heavy bottomed pan bring to the boil.
  • Remove from heat add the flour and mix using a wooden spoon or spatula.
  • Return to moderate heat and stir till mixture leaves sides of pan clean.
  • Remove from heat .beat with spatula to remove some heat
  • Add the egg mixture by degrees till absorbed into the paste.
  • Whilst still warm stir in the grated cheese
  • Allow to cool.
  • Using a piping bag without a tube pipe out on to a non stick tray or sil-mat sheet into marble size balls.
  • Bake for approx 10mins till golden brown .
  • Serve hot or allow to cool.
  • Store in a sealed container....
