Leek and Snowdonia red devil cheese Tart


A lovely cheese tart


Ingredients

  • 100g Leek Julienne, blanched
  • 200g Snowdonia red devil cheese
  • 100 ml Double Cream
  • 5 x Egg Yolks
  • 1tbsp Salt and pepper
  • 10g Chopped Chives
  • 4 x Tartlet Cases
  • Garnish - Apple celery and walnut salad, Vine tomatoes & Welsh mustard vinaigrette

Instructions

  • Sauté the leek in butter without colouring and season with salt and pepper. Share the leek between the 4 tartlet cases.
  • Thinly slice the cheese and layer on top of the leek.
  • Mix together the cream and egg yolks season with salt and pepper and add the chives. Pour this mixture over the cheese to fill each tartlet case sprinkle with the chopped chives.
  • Bake at 180 C until golden and just set.
