Green Thunder, Rice & Celery Croquettes


Ideal as a starter or an accompaniment to a main course.


Ingredients

  • 200g (8oz) risotto rice
  • 1 1/2 pints chicken stock
  • 150g (6oz) 'Green Thunder' cheddar cheese - Snowdonia Cheese
  • 150g (6oz) fresh white breadcrumbs
  • 100g (4oz) plain flour
  • 100g (4oz) celery - finely chopped
  • 3 medium free-range eggs
  • Salt & pepper
  • 1 dessert spoon fresh chopped chives
  • Oil for frying

Instructions

  • Cook the rice in the chicken stock, according to the guidelines on the packet.
  • Drain and while still warm stir in the cheese, celery, salt and pepper and one beaten egg. Allow the mixture to cool, shape into small croquettes.
  • Whisk the eggs well, dip the croquettes into the flour then the egg wash and then into the breadcrumbs.
  • Deep fry at 370°F for 3-4 minutes. Or oven bake - spray or brush with oil and bake in a hot oven for 15 minutes until golden brown.
  • Serve as a starter or an accompaniment to a main course.
